Apple pie cookie cake

Basically a giant apple pie cookie!

Preheat oven to 350 F (180 C). Peel, core and dice the apples (or grate if you want them really finely sliced). In a small saucepan, combine all filling ingredients, and bring to a boil. Once boiled, simmer for about 10 to 15 minutes (or until the apples are really soft).

Meanwhile, in a small bowl, mix flour, salt, and baking powder; set aside.

In a larger bowl, cream butter with sugars and vanilla extract until nice and creamy. Add egg, mix well, then slowly incorporate the flour mixture (do not use an electric mixer here).

Lighty grease a round/oval dish (or a skillet). Transfer about 2/3 of the dough to the dish, and even it out (don’t worry if the dough is dense).

Add the apple filling, even it out (or don’t), and then the rest of the dough.

Sprinkle with cinnamon and bake for 35-ish minutes.

Eat it warm (with ice cream or caramel sauce) or let it cool completely, then cut into squares.

Filling
  1. 2 apples
  2. 1 tbsp (15 g) butter
  3. 1 tbsp brown sugar
  4. 1 tsp ground cinnamon
  5. 1 tsp vanilla extract

  1. 1 cup flour
  2. 1/4 tsp baking powder
  3. 1/4 tsp salt
  4. 1/2 cup (113 g) butter (softened)
  5. 2/3 brown sugar
  6. 1/3 granulated sugar
  7. 1 egg
  8. 2 tsp vanilla extract
